TLT’s (Vegetarian BLT’s)

This is another one from the summer archives (don’t mind the sides of corn and watermelon).  I’m clearing out a lot of space in the chance to get all the upcoming holiday posts ready.  But, this is a good one.

BLT’s.  Oh, how I miss them.  At one point, BLT’s were a solid staple in my diet….especially the one from Jimmy John’s.  Oh, well.  And, to be honest with you, as I am not a huge fan of “fake meat”, a BLT was something that I didn’t think I could recreate with chance of even showing a little respect to the original.

But this recipe is the classiest and, dare I say, “sexiest”, version of a BLT I have ever made.  Yes, it’s a little bit of work.  Roasting tomatoes and marinating the tempeh (this is definitely a prep-ahead-of-time meal for a weeknight) isn’t a quick thing (but it’s oh so worth it), and, again, I have a lot of guilt posting this when getting your hands on some nice, fresh tomatoes may take some work.  And an avocado-mayo mash?  Well, ok, if I have to.  Skip the mayo and just keep the avocado mash if you want a skinnier version.  Top all of it onto some whole wheat crusty bread, and we’re good to go.

TLT’s (Vegetarian BLT’s)

Servings: about 4

 

Ingredients

For the marinade:

3 tablespoons olive oil

1/4 cup soy sauce

2 tablespoons balsamic vinegar

2 tablespoons brown sugar

1 teaspoon or so of Liquid Smoke, optional, to taste

3 tablespoons adobo sauce from a can of chipotle peppers

8 ounces tempeh (I bought a “smoky” version), cut in strips

For the sandwiches:

2-3 Roma tomatoes

1/4 cup olive oil

1 tablespoon brown sugar

Sea salt, just a pinch

1 avocado, mashed

1/4 cup mayonnaise, optional

Spinach

Whole wheat bread, toasted

 

Instructions

1. Preheat the oven to 350 degrees.

2. For the marinade: In a medium bowl, whisk together the 3 tablespoons of olive oil, soy sauce, balsamic vinegar, brown sugar, adobo sauce, and Liquid Smoke (if using).

3. Pour about one-third of the marinade into an 8×8″ baking dish and place the tempeh in a single layer over the sauce.

4. Pour the remaining marinade over the top of the tempeh, cover, and refrigerate for at least 2 hours, or overnight.

5. For the roasted tomatoes: Slice each tomato and arrange in a single layer in a baking dish.

6. In another medium bowl, whisk together the olive oil, brown sugar, and sea salt.  Pour this evenly over the tomatoes and lightly brush the tomatoes with a silicone brush to ensure that they are evenly covered by the oil mixture.

7. Bake for about 45 minutes or so, or until slightly shrunken.

8. For the sandwiches: Once the tempeh is done marinating, heat a non-stick frying pan over medium heat.

9. Add the slices of tempeh (be gentle, mine were very fragile and a few broke), and cook each one for a few minutes on each side.

10. For the avocado-mayo:  Gently mix together the mashed avocado and the mayonnaise until as smooth as possible. (It will still be lumpy, and that’s ok.)

11. To assemble the sandwiches:  Place a spoonful or two of the avocado-mayo on top of the toasted bread.  Top this with tempeh, spinach, and roasted tomatoes.  Enjoy.

Fig-Blueberry Clafouti

 

 

This is one of those random, spur-of-the-moment, recipes that I tried on the fly in my kitchen one morning.  I had all of the ingredients on hand, and I had visitors in town.  Instead of going to brunch and spending money on food, I decided to whip this up as we were slowly waking up, lounging in front of the TV, and laughing over the previous night’s debaucheries.

I’ve posted a similar recipe here on the blog, but since I had the figs on hand, I wanted to try this variation.  The nice thing is that you could potentially try all sorts of different fruits here (I am partial to the baked figs, though-holy smokes, they were good).  Now, while this recipe won’t win any awards for being super photogenic, it tastes pretty good, which is why I decided to share it with you.  It’s a light, custard-y and sweet breakfast casserole-ish. (Does that make sense at all?)

I haven’t tried converting this to a lighter version: egg whites, skim milk, etc; but I think it could be done.  I served this plain, as a mid-morning brunch main course with some poached eggs and coffee on the side.

Fig-Blueberry Clafouti

Servings: about 4-6

 

Ingredients

8 medium figs, halved

1 cup fresh blueberries

1 cup flour

2 tablespoons cornmeal

1/2 teaspoon salt

Grated lemon zest, to taste

3 eggs

1/2 cup granulated sugar

1 and 1/2 cups whole milk

Sugar, for sprinkling over the top, optional

 

Instructions

1. Preheat the oven to 350 degrees.

2. Place the fig halves in a single layer on the bottom of your baking dish (I used a pie pan, but you can use whatever shape you have-the original recipe calls for a 7×13-inch oval gratin pan or a 9×11-inch baking pan), cut side down.

3. Place the blueberries around and over the figs.

4. In a medium bowl, whisk together the flour, cornmeal, salt, lemon zest, and eggs.

5. Add the sugar, and whisk until combined.

6. Slowly whisk in the milk, about a 1/2-cup at a time, mixing well after each addition.  Whisk until thoroughly incorporated.

7. Carefully pour the milk mixture over the fruit.

8. Bake for about 30 minutes or so.  After 30 minutes, sprinkle the additional sugar (if using) over the top and continue to bake for another 15 minutes, or until puffy and lightly golden.  Serve immediately.

Butterscotch Cheesecake, A Curvy Carrot Birthday, and A Giveaway

Pretty long title, huh?  Well, there’s a lot going on in this post.

First things first:  I turned 32 years old last week. It was a birthday extravaganza, needless to say.  I had a lot to celebrate this year:  three moves (one cross country, one involving a truckload of boxes of my belongings taking up a parking space temporarily in my parents’ garage for almost three weeks, and one involving a brand new (amazing) condo in a brand new city.)  A new job (my ultimate dream job) which symbolized the end of nine years of pretty intense post-graduate education and the fact that I am supposed to now become a grown-up.  I’ve had my heart broken (at least twice, so at least I know it still works), but I’ve also filled my heart with many new friends and memories in the past year that make up the difference.  All in all, it’s been a pretty good year.

Which is why I am posting a butterscotch cheesecake (sadly, as I type this, I am beginning my first phase of P90X training, so desserts like these are off limits for a few months).  Don’t be intimidated by this cheesecake.  It’s not hard to make at all-in fact, I was a little astonished by how simple it was since I haven’t made a cheesecake in a really long time.  And, of course, you can omit the butterscotch sauce and chocolate ganache, too, but really, these are both so quick and easy to make, that it would be a shame if you didn’t.  Butterscotch is one of my very favorite flavors in the whole entire world, and in cheesecake form?  Well, let’s just say it’s a smidge like Heaven on a plate.

Butterscotch Cheesecake

Servings: 1 cheesecake

Ingredients

For the cheesecake:

For the crust:

1 cup graham cracker crumbs (I used one sleeve of crackers, about 8 big ones and used my food processor to grind them-make sure you break them up a bit before putting them in the food processor-this helps a lot.)

2 tablespoons flour

2 tablespoons sugar

4 tablespoons (1/2 a stick) unsalted butter, melted

For the filling:

12 ounces butterscotch chips (I used one whole bag of Toll House butterscotch chips-wasn’t exactly 12 ounces,but it worked.)

1/4 cup heavy cream

16 ounces (two 8-ounce bricks) cream cheese, at room temperature

1/2 cup light brown sugar, packed

4 large eggs, at room temperature

1 cup sour cream, at room temperature

2 tablespoons flour

1 tablespoon vanilla

For the butterscotch sauce:

4 tablespoons unsalted butter

1/2 cup light brown sugar

1/2 cup heavy cream

1/2 teaspoon (or so, to taste) flaky sea salt

1 and 1/2 teaspoons vanilla (you can add more, to taste)

For the ganache:

4 ounces bittersweet chocolate chips

1/2 cup heavy cream

1 tablespoon unsalted butter, at room temperature

 

Instructions

1. For the cheesecake:  Preheat the oven to 325 degrees.

2. Lightly butter or spray a springform pan; set aside.

3. For the crust: In the bowl of your food processor, process the graham crackers until they are crumbled.  Add the flour and sugar and pulse until combined.

4. With the food processor running, slowly pour the melted butter down the feed tube and process until the mixture resembles coarse sand.

5. Using the back of a spoon or your fingers, gently press the crust into the prepared pan, allowing the crust to come up along the sides, about one-quarter of the height of the pan.

6. Bake the crust for about 15 minutes; set aside to cool.

7. For the filling: Meanwhile, in a heat-proof bowl set over a pot of simmering water, stir the butterscotch chips and heavy cream together until completely melted and smooth.  Remove the bowl from the heat.

8.In the bowl of your standing mixer fitted with the paddle attachment, beat the cream cheese and brown sugar together on medium speed until smooth.

9.  Add the eggs, one at a time, mixing well after each addition, scraping down the sides of the bowl frequently and as necessary.

10. With the mixer still on medium speed, add the sour cream, flour and vanilla, and mix until thoroughly combined.

11. Reduce the mixer speed to low and add the butterscotch mixture, scraping down the sides of the bowl as necessary.

12. Pour the filling into the springform pan and gently smooth the top.

13.  Fill a 2-quart baking pan (or a large roasting pan) halfway with water and place it on the bottom rack of the oven.

14. Place the cheesecake on the middle rack of the oven and bake for one hour.

15. Once an hour has passed, turn the oven off and keep the door closed.  Leave the cheesecake in the oven for one more hour.

16. Remove the cake from the oven and cool on a wire rack until it comes to room temperature.

17. Cover the cake tightly and refrigerate for at least 4 hours or overnight.

18. For the butterscotch sauce (this can be made in advance and gently reheated on either the stove or in the microwave when you are ready to drizzle it over the cheesecake.):  In a heavy-bottomed saucepan over medium heat, melt the butter.

19. Add the brown sugar, heavy cream, and salt, whisking until combined.  Bring the mixture to a slow boil and cook for about 5 minutes or so, whisking frequently.

20. Remove the pan from the heat and add the vanilla, adjusting both the salt and the vanilla to your tastes.  Use as desired.

21. For the chocolate ganache: In a small saucepan over medium heat, bring the cream to a very gentle simmer (do not boil!)

22.  While the cream is warming up, place your chocolate chips in a separate medium-sized bowl.

23.  Once the cream is hot, pour it over the chocolate and let sit for 1-2 minutes.

24.  Gently whisk the mixture until smooth.

25. Add the butter and continue to whisk until completely incorporated and smooth. (Again, this will begin to cool and thicken.  Use immediately or you can gently reheat it on the stove or in the microwave before drizzling-you may need to add additional cream to get it to have a runnier consistency.)

I drink chai, excessively, nearly every morning. On days that I’m not too lazy to wash my coffee pot and all it’s random pieces, I like my coffee (Alterra) fresh ground, strong, and with just enough sweet cream flavored creamer to alter the color (added before the coffee, so as to negate the need for a spoon).

And I can’t wait to make the cheesecake!

I love Millstone’s Espresso Roast coffee – definitely a favorite of mine!

Esther - Hello, I like my coffee many different ways. I love iced coffee, with cream and sugar or with bailey’s, kahlua or amarula on a cold wintery night. I learned to love coffee as it helps relieve my migraines:)

Val - I mostly drink my coffee black, but enjoy playing with different flavored coffees. My favorite way to enjoy it is sitting on my back patio with a freshly brewed hot cup in the morning and watching my dogs frolic in the yard.

Linda - Happy Birthday to you! You have accomplished so much in your 32 years. But I am sorry your heart was broken a couple of times. Keep in mind that those experiences are in your “file” of what you like and don’t like for when the real love of your life comes along. It will happen, I assure you of that! As for me, I really like coffee especially when my husband makes it; but I love tea. I love my tea so strong that I leave the tea bag in it. I wrap the stupid string around the handle so it just bobs away dunking even more of its powers to keep me wired for the day. Thank you for offering these gifts. Oh, and the cheesecake is on my Thanksgiving menu.

Every morning when I arrive at the office and before I get anywhere near going into the lab, I make French pressed coffee from light roast beans. My friend and I like to purchase recently roasted beans, and we take turns grinding them with a hand cranked grinder. Everyone in the office thinks that we’re nuts, but the coffee is awesome. I normally drink it with a teaspoon of cream, but I enjoy it black.

Nichole - Well, it depends on the season or mood, I suppose, when it comes to my coffee preference. I like it black and strong – so espresso rules. Summer: iced americano. Winter and needing a treat: cafe mocha.
I do like a green or peppermint tea every once in a while!

Rachel Theis - I like my tea like this: chai tea latte with a spoonful of sugar and a bit of cocoa powder. The tastes complement each other so subtly and so well. When I do drink coffee, I like it sweet and creamy with a lot of flavor.

Karra Lantz - I only serve coffee to guest as it isn’t my hot drink of choice. I am a tea drinker. My favorite way to have my tea is with a friend, using my grandmother’s china tea cups. First I put a little milk put in the cup then then with my silver tea strainer pour steaming tea from one of my mother’s tea pots into the cups that hold many special memories to build new memories with a dear friend.

Anne - My husband and I are huge coffee fans and he finally convinced me to start drinking my coffee black a few years ago. So good and you can really taste the flavor of the coffee – I can never go back to cream and sugar!
