Miso Soup with Sweet Potato Dumplings

I got an incredible surprise this past weekend.  I am coming off of a pretty busy two weeks which have been incredibly fun and social: humane society fundraiser, theater group silent auction, work-related dinners, appointments, etc. I was looking forward to having a semi-quiet weekend at home; I wanted to head out Friday night to a gallery night in my neighborhood and Saturday night I had some dinner plans.

I had literally just walked into my condo on Friday after work, absent-mindedly fed my animals, and was opening some mail when my little sister called.  Finding it a little odd that she was calling (considering we had just texted about an hour prior about bridesmaids’ dresses for her upcoming wedding), I wondered what was up.  She said she wasn’t up to anything and asked what I was doing.  I immediately started complaining about how my wi-fi signal wasn’t working, when she interrupted me with, “Can you do me a favor?”  Thinking something was seriously wrong, I was like, “of course!”  Then she said, “Can you come out on your balcony for a sec?”

That’s when my jaw dropped.  I ran outside to find her and my mother with a giant bouquet of flowers and champagne right below my balcony.  They had been planning a secret trip for weeks, trying to figure out what my weekend plans were and made the near-5 hour drive to my place, all without my knowledge.  Best. Surprise. Ever.

So we had a great weekend…reminiscing a lot about growing up as sisters with a 10-year age difference (there’s another sister…and a brother, too, but they couldn’t make the trip.)  It’s so funny to us how two sisters who didn’t want anything to do with one another while growing up are so close now.  And it makes me thankful and happy to know how much relationships can grow and change over time.  The cherry on top?  She “officially” asked me to be her maid of honor next summer (the irony of this is not lost on us, as our roles were reversed less than 10 years ago), and I couldn’t be happier or prouder (which will probably all be catalogued in the future as the wedding date approaches).

So we giggled, drank champagne (and wine), and laughed.  We shopped, and we ate a lot of cupcakes and chocolate. We took my mom shopping and relaxed afterwards with homemade popcorn and more wine.  We watched completely heinous reality TV.

And it was the best weekend I have had in a long, long time.

So now, after deciding that this week I will participate in a little detox regimen, I wanted to post something healthy, light, and completely guilt-free.  It’s still a little gloomy and cold where I am, so this soup comes as a welcome reprieve.  Completely vegan, you can adapt this recipe in any way you like.  Throw in some tofu, add in some extra veggies, add a little bit more spice.  And you are set.

Miso Soup with Sweet Potato Dumplings

Servings: 4 large servings

 

Ingredients

1 large sweet potato, pricked all over with a fork

1 tablespoon olive oil

2 cloves garlic, minced

1 shallot, chopped

Pinch red pepper flakes

1/2 teaspoon salt

1/4 teaspoon freshly ground black pepper

1 baby bok choy, sliced

8 ounces mushrooms, sliced

6 cups water, divided

12 wonton wrappers (or more, depending on how much filling you use.  I used about 20 wontons because I filled mine with less)

3 tablespoons white miso, plus more to taste

3 scallions, thinly sliced

 

Instructions

1. For the sweet potato filling: Pre-heat oven to 375˚.

2. Bake the sweet potato until soft, turning once, about 45 minutes to 1 hour.

3. Cool the potato, then peel and mash it; set side in a medium bowl.

4. Heat the olive oil in a skillet over medium heat.

5. Add the garlic and shallot to the oil, stirring, until fragrant, 1 to 2 minutes.

6. Add the red pepper flakes, salt, and pepper, mixing to combine. Remove the mixture from the heat and add the shallot/garlic mixture to the mashed and cooled sweet potato, mixing well.

7. For the soup: Place the bok choy and mushrooms in a large pot or Dutch oven with 2 cups water and set aside.

8. To assemble the dumplings: Lay 1 wonton wrapper in palm of hand. Drop a heaping tablespoon of the potato mixture in the center and squeeze the edges of the wonton together to tightly seal (I found that having my fingertips slightly wet with water helped a lot here.)Repeat with remaining wrappers and filling.

9. Set the dumplings on top of the vegetables in the pot, and, over medium heat, bring the mixture to a boil.

10. Cook, covered, until wrappers are translucent, 3 to 6 minutes.

11. Divide the dumpling mixture among your servings bowls.

12. Add the remaining four cups of water to the pot, and bring to a boil.

13. Remove from heat.

14. Add the miso, stirring until it dissolves. Divide among your prepared serving bowls.

15. Garnish with scallions.

4kings - I made this for dinner tonight. SO good!! I had frozen sweet pots from Thanksgiving that I used for the dumplings. I made about 20 dumplings and browned them before adding to the liquid. Also added 1/2 a bag of frozen kale to the mix. Great recipe!

I had this whole post ready, but I feel as if general morale needs lifting.

So, I’ll tell you something really personal and slightly hilarious.  If you know me personally, you will find this even more hilarious.

I’m single again in my early 30’s after spending my entire 20’s moving around the country, buried in books, and learning a lot about what red flags I have a tendency to overlook when being in a relationship with someone (Oh, you have a serious drinking problem?  No worries, I’m super woman and I can fix you.)  Can anyone else out there relate to this?

So, in the past three years or so, I have dabbled in getting back in the dating game, so to speak.  There have been a few short-term relationships here and there, but with me moving around so much for my training, it’s been hard to have something stick. (And, honestly, in retrospect, none of those potential candidates were probably a good match for me to stick with.)

So when I moved to a new place with a desperate need for permanence, I decided to try the online dating thing.  I know so many people who have met so many great people online, but no such luck here.

The whole concept to me is somewhat foreign.  I felt like I was advertising myself to others…and really becoming judgmental.  “Ohhhhhh, he doesn’t like cats?” Closed match.  “His favorite pastime is hunting…a lot?”  Nope, I don’t eat meat.  “He’s a smoker?”  Ummm, no.  Even some of the quirky get-your-attention tag lines were a little too much.  Which is sad because I am not normally a judgmental person, especially when it comes to something relatively personal like this.  I have respect for everyone who puts themselves out there in a position to be vulnerable like that.  And I was rejected by quite a few of them too.

I did have some nice dates.  I did meet some nice people.  But no butterflies.

I decided to give it one last shot before canceling my membership.  And, to protect anyone out there, I won’t divulge names.  I don’t think I even told this person about this blog, so hopefully he won’t even read this.  And I am telling you this solely for comical reasons and perhaps as a lesson as to what not to say on a first date.

So this was my experience.  These are direct quotes.  But let preface this by saying that said person advertised himself as being 5’8″.  I am 5’8″, and I towered over him.  I get the exaggeration of truth, and I don’t mind dating men who are shorter than me, but if there is ever a potential for you to meet someone in person, don’t lie.  Especially about your height.  Because that automatically makes me think that you might have issues with your height (think Napoleon).

“Let’s talk about high-flow mathematics.” (um, what?)

*I’m wearing a scarf.  Why?  Because it’s chilly out and it’s a trendy scarf. One that is meant to be worn as an accessory.*  After dinner:

“I noticed you were wearing your scarf all night.  And I thought, is she crazy?  Why is she wearing her scarf all night?”  At that point, with my patience, wavering, I told him that I was following a major fashion trend and remaining thoroughly and well-heated ALL AT THE SAME TIME.

“My friend (she’s a girl) set up my entire profile on the dating website and clears all the women before I go out with them.  She tells me, “Oh, go on one date with that girl”, “Go on a few dates with that one”.  She does all of the initial emailing, back and forth, for me.  I don’t get to even talk to the girl until the date.”  *At which point, with raised eyebrows, I asked if he had even filled out the 45-minute personality questionnaire that matched us.*  Perhaps sensing my growing disgust, he then quickly added, “Yes. But don’t worry.  I totally chose you from the beginning.”

Get ready for it…the kicker.  The one that had me run to the bathroom, quickly text my little sister for help with an excuse/escape plan, and plan an early end to the evening.

Out of the blue, as I was slowly raising my club soda to take a sip after I had left it at the table during a ladies’ room trip, he drops this bomb:

“So, I recently had to have a discussion with my niece about date rape.”

I immediately put my drink down and told him I was tired and needed to go home.

And that’s just the tip of the iceberg.  I’m not even mentioning the frequent and detailed mentions of his ex-girlfriend, his sushi-eating habits, and his love for rave parties (is that right? a Rave?  I don’t even know.)  Some things that a man in his late-thirties probably just shouldn’t even talk about.  I know, I am a horribly judgmental person.  I will mention that I probably said things that he didn’t like either.  Like maybe the fact that I have two cats and a dog and have been lovingly referred to by a friend as a “mobile zoo.”  But, I am a package deal.  I come with some pretty awesome animals.

The next day, I received a very long text saying what a wonderful time he had with me, that he would like to go out again, but that he wanted to directly discuss with me the thoughts I had about the evening.  It sounded oddly like a homework assignment.

I thanked him for dinner (the food was great) and said that it was nice to meet him but that I didn’t sense enough chemistry to go on any future dates.  Which was the truth.  To make matters worse, he immediately texted me back and said that half of the text didn’t go through and asked me to resend it.  AWKWARD.  I have never felt so bad about a date before in my life.

And that was my funny story.

How ’bout some comfort food?

Open-Faced Egg Sandwiches with Ricotta and Mixed Greens

Servings: 2

 

Ingredients

2 slices bread (your choice; I went with a thick pretzel bread here)

Cooking spray

1 cup mixed greens (or whatever kind of green you like)

2 teaspoons extra-virgin olive oil

1 teaspoon fresh lemon juice

Salt and pepper, to taste

Red pepper flakes, to taste (I used about 1 teaspoon because I wanted it spicy)

1/4 teaspoon minced garlic

1/2 cup ricotta (I used skim)

1/8 cup Parmesan cheese, grated

1 tablespoon green onion, chopped

2 large eggs

Instructions

1. Preheat broiler. (Alternatively, you can toast the bread in a toaster if the slices are thin enough.)

2. Coat both sides of the bread slices with cooking spray.

3. Broil until lightly toasted, about 1-2 minutes.

4. In a medium bowl, combine the mixed greens, 2 teaspoons olive oil, lemon juice, and salt and pepper; tossing gently to thoroughly coat the greens.

5. In another bowl, mix together the red pepper flakes, minced garlic, ricotta, Parmesan, and green onions. Add salt and pepper to taste here, if desired.

5. Generously spray a nonstick cooking pan (use one that you can cover lightly with another lid-I used the lid for my big saucepan, and this worked well, even thought it wasn’t a perfect fit) with cooking spray and heat the pan over medium heat.

6. Crack eggs into pan; cook for about 2 minutes.

7. Cover the eggs and cook for an additional 2 minutes or until whites are set. Remove from heat.

8.  Spread the ricotta mixture over each bread slice; top with the mixed greens and one egg.  Enjoy.

Who needs a man when you can make your own, amazing comfort food?

Sally@GoodDinnerMom - Delicious! We LOVE poached or soft-cooked eggs and these look great. My husband just discovered how yummy (and good for you) turmeric is on these style eggs. Especially if paired with a fresh avocado. Plus, we have our own backyard chickens, so reeeeally fresh eggs will be used when I make your eggs and ricotta. I just happen to have a bit of ricotta in the fridge. This might be dinner tonight!

Ferrero Rocher Cupcakes with Nutella Buttercream

“Drink your water, people.”

“He’s a bad, bad man.”

“Party’s almost over…what a bummer!”

“Ab……Ripper…..X.”

 

Anyone out there who has ever attempted P90x will lovingly (or maybe not so lovingly) laugh when you read those phrases.  I don’t know about you, but I actually hear Tony Horton saying them in my brain, which makes me automatically reach higher..chest up..arms up…head up.  Everything Up.  P90x…I hate it, but I love it. I’ve got my favorite cast members (Pam the Blam) and my not-so-favorite cast members (Frogboy, anyone?)

And I can officially say that, yes, in fact, I am a P90X graduate now.  And I am not saying that in a boastful way.  This was intense for me.  I took longer than 90 days because I took breaks over holidays and a few long weekend trips out of town where I didn’t work out.  It was a definite love-hate relationship.  In the beginning, if I had plans in the evening, I would make sure to get up extra early to “squeeze in” the minimum hour of pure pain and near-syncopal episodes.  I followed the first phase of the diet plan religiously, which was really hard, given that I don’t eat meat.  I got really really tired of egg whites.   And I definitely had a glass of wine (or two) if I was out with friends and didn’t give up (and won’t ever give up) visiting and sampling cheese displays at grocery stores.

Being 32 and realizing that my cholesterol was high was a bit of a wake-up call.  My body mass index was in the normal range, I don’t smoke, I get regular health screenings and teeth cleanings, and I walk my dog.  I was actually pretty surprised when my LDL was high (see above:  cheese displays.) But, with my dad’s recent serious health scares and long-standing history of diabetes, I knew that I needed to take care of myself a little bit better.

I think, and this is my humble and honest opinion, that so often, as women (and if you are a man reading this, you are awesome and this might apply to you as well), we neglect to take care of ourselves.  Sure, we can get our hair and nails done, buy statement necklaces, and maybe even splurge a bit on hair products. But that’s just the external shell.  I’m talking about major transformative change in the way of altering our chemical make-up.  (more on this topic in coming posts.)

Working out is hard for everyone.  After a long work day, I would much rather have a date with my couch, a cat on my lap, a few chocolate caramel truffles, and Real Housewives of Orange County.  But after this whole experience, I know that I deserve to push myself to the limits as far as physical strength goes.  And P90X is a pretty extreme way to do this (I do still modify plenty of the moves.).

So here are the results:  Overall, I lost about 5-6 pounds of solid fat.  Blubber.  Mostly around my butt and thighs (BOOYAH!).  Everyone has parts of their body that they feel less than thrilled with, and my “birthing hips”, as someone once called them, were not my favorite.  But, while *only* 5-6 pounds of fat may not sound like much…I lost a ton of inches.  Inches around my arms, my waist, my hips, my thighs.  They are gone, in blubber heaven.  I’m down about 2 dress sizes.  For the first time in my life, I bought an extra-small in something (I kind of bought it just because I could wear an extra-small in something.)  I can see some sort of muscle definition in my arms, upper legs, and…..get ready for it….maybe even a glimmer of my abs.

And the best part is this:  When I try on clothes or get ready for work in the morning..I only hear silence.  Nothing.  Peacefulness. Calm.  Why?  Because that nagging, self-deprecating, overly critical voice that pointed out every flaw and imperfection has grown quiet.

Now, while she is still there in the background, folding her arms in the corner with a “let’s see if you can maintain this” attitude about her, she’s also kind of scared.  There’s no one there to replace her, there’s still no one coming in and saying, “Yeah, rock star!  You’re awesome and amazing and perfect!”, but she’s kind of been put in her place for a bit.  It’s nice for me-a vacation, really.  It’s like having the radio up really loud in your car while trying to navigate through really difficult traffic and then suddenly realizing that you can navigate…and think…much better when the volume is down or…off.

Baby steps.  Grunting.  Screaming.  Telling Tony to “shut up” (yes, I did).  A manic stream of expletives.  Laughing at my cat while he tried to love on me during my Sun Salutations and constantly begging to be petted while I was in downward dog.  Thanking God that I have a restaurant directly below me otherwise I might have a very unhappy neighbor due to the constant jumping/hopping/landing like a cat (yeah right) that I was doing.  Sweating and drinking unhealthy amounts of water.

But feeling pretty damn good after each and every work-out.

And you know what?  I start Round #2 tomorrow.

So, it seems fairly ironic that I would post a completely obnoxiously sweet/rich cupcake on the day that I celebrate this small victory.  (I actually made these cupcakes pre-P90X days and have been waiting to post them for this sole reason.)  Because we don’t need to get nuts here.  Everything in moderation.  I enjoy things like this in small doses (or sometimes larger doses if I have had a really bad day….)

I only made 12 cupcakes for this recipe because, as you probably already know, those little Ferrero Rocher  candies can be a bit pricey.  (If you want to skip them, just fill the cupcakes with Nutella instead.)  I started with a simple chocolate cupcake base, added the chocolate in the middle of the batter, and then made a simple Nutella buttercream for the top.  I had a few leftover chocolates, so I smashed them up and sprinkled them on top.  Do whatever you like.  And then go take good care of yourself.

Ferrero Rocher Cupcakes with Nutella Buttercream

Servings: 12 cupcakes

 

Ingredients

For the cupcakes:

3/4 cup unsweetened cocoa powder

3/4 cup all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

3/4 cup (1 1/2 sticks) unsalted butter, at room temperature

1 cup sugar

3 large eggs

1 teaspoon vanilla extract

1/2 cup sour cream

For the filling:

12 Ferrero Rocher candies, unwrapped

For the frosting:  (****I doubled this recipe..it is listed here as I doubled it.  I wanted a lot of frosting.  If you would like less, please divide this ingredient list in half.)

1 and 1/2 cups (24 tablespoons) unsalted butter, at room temperature

6 cups confectioners’ sugar

2/3 cup milk

2 teaspoons vanilla extract

1 cup Nutella

Instructions

1. For the cupcakes: Preheat the oven to 350 degrees. Line a cupcake pan with the liners of your choice.

2. In a medium bowl, whisk together the cocoa, flour, baking powder, and salt.

3. In the bowl of your standing mixer fitted with the paddle attachment, beat the butter and sugar until light and fluffy, about 2 minutes or so.

4. Add the eggs, one at a time, mixing well after each addition.

5. Add the vanilla.

6. Reduce the mixer speed to low and add the flour mixture in two batches, alternating with sour cream and beginning and ending with flour.

7. Divide the batter evenly into your prepared cupcake pan.

8. Lightly press a Ferrero Rocher candy into the center of each cupcake.   (It’s ok if you don’t cover it completely with batter.  I used a spoon to try to help cover it and I think this worked well.)

9. Bake the cupcakes until a tester inserted into the center (around the Ferrero Rocher candy) comes out clean, about 20-25 minutes.

10. For the frosting:  In the bowl of your standing mixer fitted with the paddle attachment,  beat the butter until smooth and creamy, about 2 minutes.

11. With the mixer speed on low, slowly and gradually add the confectioners’ sugar, mixing until combined.

12.  Add the remaining ingredients, adjusting to taste, and mix until smooth.

Hannah - You’re inspiring! This sounds like my relationship with p90x as well. It’s so much time, but it’s time well spent. I haven’t lost much weight, but I’ve lost inches as well. I hear Tony’s voice in my head as well (and I don’t know how I feel about that). I can’t follow the nutrition guide really (I try to eat vegan 98% of the time), but I take care of myself. I’ve been putting off today’s workout and reading this blog post just inspired me to get up and get it done. Thanks!

Rachel @ The Pescetarian and the Pig - First: The cupcakes. They look amazing. Sound amazing. Your photos are wonderful! What is on top of the frosting? Is it a crushed ferrero richer ball?

Second: P90x… maaaaaan. I got that program a little over 3 years ago and I was SO dedicated to waking up early every morning and doing it, eating clean, trying to be generally awesome. I completed the 90 days, but I was pretty far away from my goal. I felt really good, though! And i could definitely tell a huge difference in my strength from day 1 to day 90. Then I got a piglet and I fell off track and I tried so many times to get back on the p90x train and I’ve never been able to do it again! I definitely know the feeling of yelling at Tony… haha. I lost patience a lot, too, and I would would fast forward through the little mini breaks because I Just wanted the time to be over already. As far as 5lbs of fat goes, I know 5lbs doesn’t SOUND like a lot, but I go to a dietician that has this actual blob replica of what 5lbs of fat looks like. It’s huge and it looks pretty gross. 5lbs of pure fat is an amazing accomplishment, too! It’s so easy to lose 5lbs of water, but when the fat is gone you can really see a difference! Congratulations!

srlacy - Hey Rachel! Yes, I just crumbled up some of the leftover chocolates and sprinkled them on top.
Yes, the five pounds of fat were a little disappointing-I certainly thought I had more to lose. But I guess the scale balances out if you are gaining muscle at the same time.

Anne Marie - I LOVE reading about your P90x success! I have to give you credit for starting my husband and me on our journey. When you first posted about starting it, and that you had real, actual muscles, I was convinced. I had been thinking about buying it anyway, and you gave me the extra edge. I have always been very thin, but not “fit.” My husband is quite overweight, and I was thankful that he agreed to do it with me. I know what you mean about hating it. In the beginning I couldn’t even do one push up. Sometimes we would just lay on the floor and laugh (“Superman, Banana!”). But slowly, things got easier. We are getting ready to begin round #2 as well! My husband lost 30 pounds and he looks great! I haven’t lost a single pound, but I am positive I’ve gained muscle. My clothes fit so much better! We are so excited about our more sculpted bodies, and the strength we have gained. So, I thank you! And I’m trying to look away from those cupcakes!

Louann Zundel - The cupcakes look amazing! Just to clarify, for the frosting, is it 11/2 cups of butter or 12 tablespoons? Because 11/2 cups of butter is 24 tablespoons.

Christin Hardi - Hi I just made a batch filling exact directions…mine did a lot of ‘cracking’ on the tops. The batter was thick but smooth. I hope I did it correctly, they’re cooling right now.
