Cherry Chocolate Kisses

 

I love chocolate.  I love cherries.  I love chocolate and cherry combinations.

So it’s about time that I shared a chocolate/cherry combination in cookie form that I came across recently.  Now, I realize I just posted a cookie recipe the other day.  I had planned to post this about a week and a half from now (you know, to spread the cookie love out a little), but, I’m starting to get the mentality of “why not?”  Why not post these super cute cherry shortbread thumbprint cookies for you if I can?  Because life is too short to go without the things in life that make you happy, that’s why.  Now, bring on the cherry chocolate kisses!

These little cookies are really too simple to mix together-it’s a basic shortbread recipe with a little added boost of chopped maraschino cherries in the batter with some almond extract.  I think the addition of mini chocolate chips to the shortbread might be on the list for next time, and I might up the cherry bits as well.  Since these are shortbread cookies, they are not in-your-face too sweet (the chocolate kiss on top helps with that)-but they definitely are a nice sweet treat to have on hand.

********Just as an FYI, these are a shortbread based cookie. They are not a typically sweet cookie. These are not like the traditional peanut butter-based version.  If you are looking for a sweet cookie, please consider increasing the amount of sugar. Some readers have commented that these are  bland-I would recommend adding more vanilla flavor or cherry  juice. Also, making sure that you use exact measurements is extremely important here.  Please note that this recipe was taken directly from the source listed below.

 

Cherry Chocolate Kisses

Servings: approximately 36 cookies

 

Ingredients

1 cup unsalted butter, softened, but still cool*****very important!

1 cup powdered sugar

1/8 teaspoon salt

2 teaspoons maraschino cherry “juice”

1/4 teaspoon almond extract

2 and 1/4 cups all-purpose flour

1/2 cup maraschino cherries, chopped

Granulated sugar, for sprinkling the cookies

36 milk chocolate kisses, unwrapped

 

Instructions

1. Preheat the oven to 325 degrees.

2. In the bowl of your standing mixer fitted with the paddle attachment, beat the butter at medium speed until creamy, about 1 minute.

3. Reduce the speed to the lowest setting and slowly add the powdered sugar and salt.

4. Add the cherry juice and the almond extract until combined.

5. With the mixer still on low, slowly add the flour, scraping down the sides of the bowl as needed.

6. Increase the mixer speed to medium and add the cherries.

7. Shape the dough into 1-inch balls, and place the balls on a baking sheet, approximately 2 inches apart.

8.  Using your thumb, gently press each cookie in its center until the cookie is about 1/2-inch thick.

9.  Sprinkle each cookie with a little granulated sugar.

10.  Bake the cookies until the bottoms are lightly browned, about 14 minutes.

11. Once removed from the oven, immediately press a chocolate kiss into each cookie’s center.

12.  Transfer the cookies to a wire rack to cool completely.

rachel - i’m in the middle of trying to make these and don’t have a stand mixer, so i’m using my hand mixer. BUT the hand mixer can’t handle this dough, it is way too dry! any suggestions?? HELP!!!

It’s definitely a thick dough. I have two options for you. You could add a touch of water to the dough to soften a bit, or, try using your hands to “knead” it, in a way. Hopefully that helps!

I am sorry that they didn’t work out for you. The recipe is correct as written. It sounds like the butter either was not at a correct temperature or was not completely mixed into the batter.

it could be the butter. cookies with butter sometimes have trouble holding their shape. perhaps try a butter/margarine combo.

Also, you can press the kiss in before cooking. It starts to melt just the tiniest bit, but gets all soft and mushy throughout. Even when it cools back to room temperature, it’s like the chocolate molecules get rearranged and they are just smoother.

DeerPark Momma - I just made these cookies. I think they are very good, although mine weren’t as pink as those in the picture above. I think I will add 3tsp of cherry juice instead of 2, for more color and flavor. The batter was a little crumbly, but I kneaded the dough in my. Hand and then formed the ball. As far as people have problems with butter pooling…that sounds to me like too much bitter was used. Remember 1cup of butter is two sticks…not a pound (or four sticks).

srlacy - You know, I think they would be just fine. It’s worth a shot. I know the dough is a little crumbly but the additional juice (if you do that) and the melty yummy chocolate might hold it better together a bit. It’s worth a shot! Let me know how they turn out if you do end up trying them.

Rachael - I mixed everything entirely by hand and they turned out great! Used three tsp’s of cherry juice, and half a tsp of almond extract. I also put in about a half a cup of coconut flakes in the second batch and they were great 🙂

Emily - I am making these cookies right now, my dough was mushy so I was seeing if I did something wrong. They might taste good anyways but I couldn’t “roll” them into a ball. I used margarine instead of butter but other than that I followed the recipe exactly.

It sounds like there is something wrong with your batter. It should have the consistency of shortbread (almost too hard to mix). Since I am not there with you, I cannot tell you what has happened. I don’t think that the margarine would have made that much of a difference, unless it was too warm or melted.

Sandy - ohmyword- I think I found the long-lost recipe I’ve been searching for! When I was a kid I had a cookie called “santas whiskers”. JIMI - Reading everyone’s comments, I wonder if you refrigerated the dough (maybe 30 min) before rolling into balls would help…The longer you work with butter in a cookie, it will tend to soften..and of course, you know that.

Mary - I was just wondering if these are suppose to have baking soda or powder because I do not see it listed in the recipe? That may make a difference in the way these bake (fluffy vs flat). Also you do not mention chilling the dough before it is baked but I have found this helps with cookie dough to maintain its shape or form while baking. What do you think? Jayme - What type of flour do you recommend? I used unbleached flour, and they kind of have a flour-y taste to them. I am wondering if I use all purpose that maybe they won’t have the flour taste. I know they aren’t a super sweet cookie, what would you recommend to make them a bit sweeter? More powdered sugar? I like things sweet:)

I swear by King Arthur Flour Company. I used an all-purpose flour. I would suggest increasing the amount of cherry syrup or sugar. They definitely are not a super sweet cookie. But that should do the trick!

jo - I too had the problem of “flat” cookie. The first batch was too loose to roll into balls so I used a mini ice cream scoop, but they didn’t hold the nice ball shape and came out more flat.

The second time I refrigerated the dough so it was easier to handle and so I could roll them into balls with my hands. Much better turn out!

Danielle - These look WONDERFUL! I was wondering if I could substitute the maraschino cherries with candied cherries and some grenadine. I don’t have enough maraschino cherries on hand and I want to make these now, lol. I think I will try it out an let you know how it turns out. I didn’t use red food coloring, believe it or not. If you are making the dough and think that the color is a little off, you could definitely add in a smidge of red food coloring to get it to the tint you desire. It might have to do with what type of maraschino cherry I used-I feel like some syrups might have more coloring than others. Good luck!

Jessica - These turned out great, although I wish the cherry/almond flavor were a bit more pronounced. Next time I might add more almond extract, like 1 tsp. The dough seemed really soft so I chilled it a bit before cooking. I managed to get more than 4 dozen cookies out of the recipe – always a bonus to get more than the stated yield!

Mari - LOVE these! I made a double batch (made 56) cookies and then another single batch (it made 25). Made them for our annual Christmas Cookie exchange party ( we exchange 6 dozen cookies). They taste yummy, and the pink cherry color added with the chocolate kiss are perfect! And p.s. my dough was just right and not runny or crumbly, so tip is to follow the recipe exactly and drain your cherries.

But when I tasted them, I am like a couple others on here, they tasted very floury. I used the normal name brand at Meijers.. Gold Meal or what ever the name is.. lauren - in reply to using vanilla extract as a substitute, i did and it worked very well. im reading alot about how some people had them turn out tasting like flour. i tasted my dough and it tasted like that to me so i actually added a ton more cherry juice (granted i love cherries) and they turned out delicious and everyone loved them. thank you for the recipe!!

PT - I made these today for my preschool’s Valentine’s Party. They were a big hit and so easy to make. Following your tip about how bland the dough can taste, I rolled the dough in sugar and added an extra tsp of cherry juice. Next time I would add even more cherry juice, probably even some more chopped cherries, and I will definitely up the almond flavoring next time. I couldn’t taste that at all. It’s a great recipe, the flavors just need a little tweaking. They looked so festive, and the kids just gobbled them up. (I also looked around for the cherry kisses to put on top, but I couldn’t find them anywhere. I really want to try that some time!)

Stacy - I’m finishing a batch of these for my daughter’s preschool (and perhaps for our baked goods table at work tomorrow, too, depending on how many I send to daycare.)

I think they’re delicious. Not too sweet, but very rich and tender. Definitely a winner in my book.

I always have to tweak a recipe so: I used 2 tablespoons of cherry juice and a generous half-cup of chopped cherries. I also added a 1/4 teaspoon of good-quality vanilla and a scant 1/3 cup of mini chocolate chips. I used dark chocolate kisses on top. I might like a bit more cherries chopped up in them.

I found the dough just fine to work with; that extra cherry juice and some good mixing are what really got it to come together for me because I despaired for a few minutes there and was scraping down like mad.

Things I noted: the dough is quite tender and cools fast out of the oven. Have the kisses already unwrapped so you can put them into place quickly. I cracked a couple of cookies near the end of my first batch. And while the dough gets firm fast, the kisses will take some time to firm back up so they really need to cool for a bit.

I do wish I’d put more vanilla and chopped cherries in. I like the look of the cherries in the dough but it might be prettier if I’d made it a bit less pink. I also think these would be lovely with some red sugar sprinkled over them for sparkle.

Shannon Crane - I made these cookies by substituting Vegan butter, unbleached flour and almost 1/4 cup mini chocolate chips. I added 4tsp of extra cherry juice and 4 tablespoons of almond milk because my dough was a little crumbly. I rolled them lightly in turbinado sugar before putting them in the oven. They came out great, my husband said they are one of his favorite cookies now. 🙂

Marie - Hello, I made these today as something different for my Christmas cookie trays. They are great added more juice, vanilla and almond, and extra cherries. I do agree the oven temp should be higher maybe 350 they took extra time to be done in the middle at 325.

Terra - I just made these for an upcoming cookie exchange… mine totally didn’t turn out as beautiful as yours!! darn!! the dough was dry – but i added more cherry juice and used my hands to make the dough/balls …i also had to either increase temperature or cook for longer… and the kisses totally melted very quick into the cookie.. eating sorta warm was good cuz the melted chocolate helped with the dryness of the shortbread… cookie exchange isn’t for a few days – oh well! they will have to do! lol Thanks for the recipe!!

I read the intro and knew they would be more salty then sweet so I rolled them in granulated sugar before thumbing and put chocolate cherry cordial creme kisses on top that ex tr a sugar and melted chocolate and sweet creme was the perfect 6sweet/salt taste I enjoy. Yum!

Jackie - Also forgot to say I have a trick for butter type cookies so they don’t fall flat use a paddle mixer creme butter when still cold and completely solid creme all the way then take bowl put back in the fridge for 10 minutes the mix rest of liquid ingredients. Once you get a set of cookies ready to go in the oven put the dough back in the fridge till your ready for another batch!!

Rosemary M. - I baked these cookies for a Valentines luncheon, and they did taste like flour as one of the other comments indicated. I was disappointed, so I only made 1 batch. However, the day of the luncheon, the flour taste was not noticeable.

I do have one suggestion & that is to roll the cookie balls in sugar (I used raw sugar) rather than sprinkling w/sugar after flattening. The sugar stays on better.

Anne - I just made these and they’re delicious! I used dark and milk kisses and I plan to use heart-shaped Dove chocolate next time. They color is lovely and the cherry flavor is subtle, but tasty. I forgot to buy almond extract, so I imagine they’re even better with it. I was experimenting, so I rolled some in sugar, sprinkled some as directed, and even cooked some halfway to try freezing. After defrosting, I’ll cook the last 7 minutes and top with chocolate. I’d like to be able to make them ahead for an event. Thank you!!

Crunchy Baked Onion Rings

 

Here’s a side dish that I made one evening, and I am going to sheepishly admit to you that I ate them for lunch the next day. Nothing else for lunch.  Just onion rings.

I absolutely love onion rings.  In all shapes and forms.  Baked, fried, breaded-you name it-I love them.  I have tried a few different baked onion ring recipes lately, looking for an onion ring with all of the flavor but without the guilt of oil-laden calories.  This recipe was the winner.  The original recipe calls for a potato chip breading, but since I normally don’t keep those on-hand, I used panko instead.  I added a little seasoning in the form of Ranch powder.  Now, please don’t judge.  I love Hidden Valley Ranch powder packets.  I find the powders to be a super flavorful mix-in to almost anything-cream cheese, breading for all sorts of things, and as a simple seasoning for main dishes. These onion rings were crunchy, tangy, a little spicy, and a total craving cure.  Feel free to play around with the cayenne powder. I thought about adding more, but, it seemed like a lot of spice, and I didn’t want to go overboard. Next time I make these, I would add just a little bit more.

And as far as the dipping sauce?  It’s just like the one found at a chain steak restaurant.  It takes less than 2 minutes to put together, and you probably already have all of the ingredients in your kitchen.

Crunchy Baked Onion Rings

Servings:  4

 

Ingredients

For the onion rings:

Cooking spray

4 cups panko

1/2 teaspoon cayenne

1 teaspoon buttermilk Ranch salad dressing powder

1 cup buttermilk

1/2 cup plus 2 tablespoons all-purpose flour

1/2 teaspoon salt, plus additional salt for seasoning

1/2 teaspoon ground pepper

1-2 Vidalia onions,peeled and sliced into 1/2-inch slices***I used two large onions, and ended up having too many.  I would recommend starting with one and then adding as you go.

For the dipping sauce:

1/2 cup mayonnaise

2 teaspoons ketchup

2 tablespoons cream-style horseradish

1/4 teaspoon paprika

1/4 teaspoon salt

1/8 teaspoon dried oregano

Ground black pepper, to taste

Cayenne pepper, to taste


For the onion rings: Preheat the oven to 450 degrees.

2. Spray a baking sheet liberally with cooking spray.

3. In a shallow bowl, combine the panko, cayenne, and Ranch powder.  Mix well and set aside.

4. In another bowl, combine the buttermilk, 2 tablespoons flour, and salt and pepper.

5.  In a large, plastic freezer-storage bag, add the remaining flour.  Add the onions to the bag, seal it, and toss lightly to thoroughly coat the onions with flour.

6.  Dip the onions, one at a time, (using a pair of tongs-it’s much easier this way!) in the buttermilk mixture, and then transfer each one to the panko mixture to coat thoroughly.

7.  Place each breaded onion ring on the baking sheet.

8. Spray the onion rings again with the cooking spray to evenly coat.

9. Add salt and pepper generously to taste.

10. Bake for 20-25 minutes or so, or until the coating is crispy and lightly browned (while these are baking, make your dipping sauce).  Serve immediately.

11. For the dipping sauce: In a small bowl, combine all of the ingredients and mix well.  Refrigerate until serving.

Triple Chocolate Cookies

 

Hello, Triple Chocolate Cookies.

I made these for my nephews the other day while I was babysitting them.  Elliott loves chocolate, and Oliver just loves food in general (so cute!), so this was something that I was looking forward to sharing with them.  I didn’t have the thought to take a picture of them with chocolate covering their faces, but the look on Elliott’s face when I handed him his very own cookie, still warm from the oven, was priceless.  He and I stood by the oven door, watching the cookies bake and talking about how wonderful the kitchen smelled.  I hope that my love for all things cooking/baking-related gets passed down to these boys.

Since this was an impromptu recipe for me, I didn’t have all the ingredients on hand.  I had to modify the recipe quite a bit-I had to leave out quite a bit of chocolate (travesty), but the cookies still had enough chocolate to knock out my intense chocolate cravings.  And, better yet, they are Elliott and Oliver-approved.  Moist, thick, and fantastic with a cold glass of milk and a movie date with your nephews. Life doesn’t get much better than that.

Triple Chocolate Cookies

Servings: approximately 36 cookies

Ingredients

2 cups all-purpose flour

1/2 cup dark cocoa powder***I used Hershey’s dark chocolate cocoa powder for that rich taste

2 teaspoons baking powder

1 teaspoon salt

8 ounces bittersweet chocolate chips

8 ounces semisweet chocolate chips

4 large eggs

2 teaspoons vanilla

2 teaspoons instant coffee crystals

10 tablespoons (1 and 1/4 sticks) unsalted butter, softened

1 and 1/2 cups packed light brown sugar

1/2 cup granulated sugar

 

Instructions

1. Adjust the oven racks to the upper-middle and lower-middle positions, and preheat the oven to 350 degrees.

2. Line baking sheets (I ended up using 4 total) with parchment paper.

3. In a medium bow, combine the flour, cocoa powder, baking powder, and salt. Set aside.

4. In a heatproof bowl over gently simmering water, melt the half of the chocolate (4 ounces of the bittersweet and 4 ounces of the semisweet), stirring until smooth.

5. In a small separate bowl, whisk the vanilla and egg together.

6.  Add the coffee crystals to the vanilla/egg mixture and stir to dissolve.

7. In the bowl of your standing mixer fitted with the paddle attachment, beat the butter at medium speed until smooth and creamy.

8. Add the sugars and beat until combined, about one minute.

9. Reduce the mixer speed to low and slowly add in the vanilla/egg/coffee mixture, mixing well.

10.  Add the melted chocolate and remaining chocolate chips, and mix until combined.

11.  Add the dry ingredients to the mixture and mix until just combined.

12.  Cover the bowl with plastic wrap for about 15 minutes or so at room temperature: when you make your cookies, you will need the dough to be have a fudge-like consistency.

13. Using a cookie dough scoop (or a spoon), scoop dough onto the prepared baking sheets, leaving about 1 and 1/2 inches between each dough ball.

14. Bake the cookies, rotating and switching the baking sheets halfway through, for 10 minutes.  ***They will look very soft, but that it what they are supposed to look like!

15.  Cool the cookies on the baking sheets for about 10 minutes, and then transfer to a wire rack.

16. Repeat the baking process with any remaining dough.

srlacy - Hahaha! No. I actually had that thought when I was making them, like, “Uh oh. This could totally backfire on me.” They took their naps like always. Although, I will say that I limited them to one cookie each (just in case) and then sent the rest home with my sister. She hasn’t said anything. 🙂

Mestebla - I just made a double batch of these (going to be giving most of them away) and wow are they GOOD! It’s a good thing I’m giving most of them away or I’d be tempted to eat all of them. I did notice that 12 minutes seemed to be better amount of baking time for my oven. I like gooey cookies, but they were too underdone at 10 minutes. Thanks for a great recipe!
